- Donair meat left over from last day is displayed on hot holding and its temperature is recorded 45 degrees Celsius. Operator indicated that this meat was transferred to hot holding from the cooler. Operator is advised to re-heat the meat to 60 degrees Celsius before transferring it to hot holding. Operator agreed to it.

- No sanitizer solution was prepared during inspection. Cleaning cloths were stored in a bucket of water. The operator prepared 100ppm chlorine solution during inspection and had the cleaning cloths stored in the solution.Please ensure the required 100ppm chlorine/bleach sanitizer solution is maintained. Store used cleaning cloths in a sanitizer solution when not in use.

- 1. Improper thawing procedure was observed. Frozen chicken was soaked in water inside the sink to thaw. The operator opened cold running water over the chicken product during inspection.2. Chicken breast was left on the counter to thaw. The internal temperature was measured to be at 0C. The operator moved the chicken to the cooler during inspection.Please note that food can be properly thawed in the cooler or under cold running water.
