(a) the food establishment and equipment are maintained, cleaned and sanitized;
- A mechanical dishwasher (glass dishwasher) using a chlorine sanitizer is required to meet the following perameters:100ppm. Glass dishwasher sanitizer was 0ppm during inspection. Sanitizer had to be replaced during inspection.
