      • Wet cleaning clothe for disinfecting surfaces were found on the counter in the bakery area. Operator placed clean clothes in buckets with 200ppm quats sanitizing solution.-Ensure all cleaning clothes are submerged in sanitizing buckets when not in use.
    • 09. Are chemicals stored and handled in a safe manner?
      • The spray bottles for sanitizing at cafe and bakery were not labeled. Operator labeled them.-Ensure all containers that are for storing chemicals are labeled correctly.
    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • No test strips for the sink and surface sanitizer and the test strips available had expired.-Ensure valid test strips are available for measuring the sanitizing agent concentration.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • a scoop with handle and potion cups were stored in contact with the bulk seeds at the bakery area.-Store scoops with handles sticking out of the food for easy handling without contamination.

      • There were dirt and debris build up under the-dough sheeter equipment, -prep cooler and -prep freezer at the bakery area.Clean all hard to reach areas

      • There was no paper towels or paper towel dispenser available. Staff were using a reusable cloth towel for drying hands.Install a paper towel dispenser in the facility. Ensure that paper towel in/on a holder/dispenser are available at the hand sink at all times.
