    • 209 - Food not protected from contamination [s. 12(a)]
      • Observation: Bowls of food stored directly on top of food inserts inside of prep cooler (back line). Bowls may directly contact and contaminate ready to eat food items.
      • Corrective Action: Remove bowls from prep cooler. Bowls of food to be stored in such as walk-in cooler, or bottom of prep cooler as space allows.
    • 306 - Food premises not maintained in a sanitary condition [s. 17(1)]
      • Observation: (CORRECTED DURING INSPECTION) Metal shelving used to store dish ware at front of kitchen had some build up of food debris, staining.
      • Corrective Action: Shelf was cleaned during inspection. Continue to ensure that food contact surfaces are cleaned as needed.
    • 306 - Food premises not maintained in a sanitary condition [s. 17(1)]
      • Observation: Truck deep frying area has a significant amount of built up grease and food debris. Build up of grease may attract pests and make cleaning of the area more difficult.
      • Corrective Action: Perform thorough cleaning of the indicated area.
    • 309 - Repeat Chemicals, cleansers, & similar agents stored or labeled improperly [s. 27]
      • Observation: Some bottles of sanitizer observed to not be labeled at time of inspection.
      • Corrective Action: Spray bottles must be labeled to indicate what is contained inside.

    • 306 - Food premises not maintained in a sanitary condition [s. 17(1)]
      • Observation: (CORRECTED DURING INSPECTION) Storage shelving for pans along the prep line was observed to have some residue and build up of food debris. One set of pans was being stored on top of a towel. This is an absorbent surface and may harbor bacteria.
      • Corrective Action: Shelving was cleaned during inspection. Ensure that all cook ware is stored on flat, easily cleanable non-absorbent surfaces in the future.
    • 306 - Food premises not maintained in a sanitary condition [s. 17(1)]
      • Observation: General sanitation in truck mobile area used for frying has considerable build up of grease around the fryer units along the walls and doors. This can provide a surface for bacterial growth that may contaminate prepared food and attract pests.
      • Corrective Action: Perform a deep clean of the area around the fryer in the truck.
    • 309 - Chemicals, cleansers, & similar agents stored or labeled improperly [s. 27]
      • Observation: Sanitizer bottles are not labelled.
      • Corrective Action: Ensure that bottles used for sanitizing food contact surfaces are labeled properly. This can help prevent potential risk of contaminating food or hazardous mixing of chemicals.
    • 311 - Premises not maintained as per approved plans [s. 6(1)(b)]
      • Observation: Plastic on the inside roof of both microwaves is melting off. This represents a potential physical contamination hazards for any food being heated in the microwave.
      • Corrective Action: Repair or replace microwave units.

      • Observation: Rubber seal for a standing freezer inside of the mobile truck is mostly peeled off.
      • Corrective Action: Repair the seal for the freezer. On-site manager stated that an order has been put in for a replacement.
