    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • Bleach in one of the sanitizer buckets was measured at 50 ppm.-Ensure that the bleach is maintained at 100 ppm.
    • 07. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Critical)?
      • 1) Ice bag was observed to be broken down on the floor by the operator.-Do not break the ice on the floor and ensure that the ice is protected from contamination.2) Couple of the food containers in the refrigeration unit were uncovered.-Ensure that the food containers are properly covered to prevent contamination.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Tofu in the hot holding unit was measured in between 35-38 degrees C.Reheat the food to at least 74 degrees C before serving.-Ensure that the perishable food is maintained at 60 degrees C or greater in the hot holding.

      • There was no food contact surface sanitizer available in the snack tent.Ensure that food contact surfaces sanitizer is prepared and readily available in each food handling area at all times.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • The basin of one hand wash sink in the snack tent was full of rags/wiping cloths. Hand wash sinks must remain free of obstructions at all times to facilitate proper hand washing.
    • 14. Does the special event vendor have an adequate supply of potable hot and cold running water and is the water sampled at required intervals?
      • One of the sinks in the snack tent did not have hot water available. Staff had unplugged the water heater to plug in the popcorn machine.Ensure that sufficient power lines are available so that the hot water heater can remain plugged in at all times.
