- Observation:
- OBSERVATION #1: One of the prep coolers is operating at 15C (air temp). Staff say that all items were just prepped and placed in the unit for the lunch rush and that no items are stored in this cooler overnight. At the moment, this cooler must not be used to hold potentially hazardous foods for longer than 2 hours until it is repaired.

- OBSERVATION #2: The walk-in freezer is not working. The kitchen facility was approved based on having a working walk-in freezer to accomodate the amount of food storage needed for this size of kitchen.

- CORRECTIVE ACTION #1: Discard all potentially hazardous foods held >2 hours in this prep cooler. Discontinue using prep cooler and repair it ASAP. Cooler must be capable of maintaining less than or equal to 4 degrees Celsius. Record temperature in log daily.
