- The concentration of the bleach solution was measured to be below 100 ppm. The operator prepared a new solution, which was measured at 100 ppm.Please make sure to check the concentration of the solution in every 2 to 4 hours.

- 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
- Staff were observed to be practicing handwashing during food service (IN COMPLIANCE). But the soap at the hand sink was in bar form. Note that the Food Code requires that hand sinks are "provided with soap in suitable dispensers". Bar soap is not appropriate for use in a commercial food establishment. Operator had liquid dish soap on site and would use this for the remainer of the event. PHI advised that a pump style, hand soap dispenser would be more appropriate for all future events.
