- 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
- 1. The concentration of a bucket of Quat sanitizer at the bar was measured to be at 50ppm. Two automated sanitizer mixers at the kitchen area were dispensing premixed Quat solution at a concentration less than 100ppm.2. Used cleaning cloths were not being stored in a sanitizer solution. Cleaning cloths were observed on kitchen counters.The staff manually prepared 200ppm Quat sanitizer solution during inspection and stored the cleaning cloths until the automated mixer is recalibrated. Manual sanitizer mixing will continue until the dispensers are re-calibrated. Please ensure used cleaning cloths are always stored in a sanitizer solution when not in use.
- 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
- Two sanitizer mixing/dispensing equipment at the kitchen area were dispensing Quat sanitizer solution at a concentration less than 100ppm. Please contact your chemical provider/service company to re-calibrate the dispenser. The required 200ppm must be maintained at all times.
