    • 23(1)(b) All equipment and utensils used to process, prepare, store, serve, sell or display food must be designed, constructed, installed and maintained to (b) allow adequate cleaning, sanitizing and maintenance.
      • A knife storage rack is required by the countertop near the prep cooler. Knives should not be stored in the crack between the prep cooler and counter top as this area cannot be cleaned and sanitized.
