    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • The fridge by the dish sinks was measured at 12 °C. Bags of hot dogs and a case of snack trays (pepperoni & cheese) were measured at the same temperature. The operator indicated that the temperature of the cooler was taken in the morning around 9 a.m. and it was 1 °C. To correct it, the operator threw away the perishable food in the fridge and posted a sign that says "Do not use" on the fridge.
