    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Hotdogs and taquitos on rollers measured between 52-58C internally. Operator reheated them to above 71C internally before increasing the temperature of the rollers and placing them back.ENSURE:High risk foods are first cooked to 71C before being maintained at 60C at all times while hot-holding.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • Floor under stand-up cooler in the back is in an unsanitary condition. Cleaned during inspection. ENSURE:Floors under food storage and prep surfaces are maintained in a sanitary condition.

      • Quats sanitizer concentration was 0ppm. Staff informed that they were mixing the sanitizer with water. The sanitizer provided is pre mixed and does not required to be mixed in water. This was corrected during the inspection.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • Handwash station in the back did not have soap. This was corrected during the inspection.Please ensure that soap, paper towels and hot & cold running water are provided for handwashing.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • Standing freezer had food debris and spills.Area behind the pop syrups had a spill. Please ensure these areas are cleaned to prevent pest harbourage.

      • Operator stated that the hot water tank in the facility stopped working as of last night. There is no hot water for the kitchen portion of the facility. Owner has contacted a contractor to service the water tank. Operator has been utilizing hot water from a separate water tank in the back room of the store. Ensure that the hot water tank is serviced.
