      • Surface sanitizer was not prepared for use in the front service area. Operator prepared chlorine sanitizer during inspection and concentration was tested at 100 ppm.- Ensure that sanitizer solution is prepared for use at all times for each food handling area.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Tapioca pearls placed in the front hot holding unit were measured at 50.5C. Operator increased unit temperature and was recorded at 60.2C during inspection.- Ensure cooked pearls maintain temperature of 60C or above at all times.

      • An electric fly-zapping racket was found in use within the back kitchen area. - Immediately discontinue use of the electric fly-zapping racket.

      • Buildup of debris was noted underneath the standing cooler near the kitchen entrance.- Thoroughly clean underneath the cooler.

      • The prep cooler at the retail area holding the toppings was not maintaining 4°C.The toppings under refrigeration were promptly stored in a different refrigeration.Perishable foods under refrigeration must be maintained at 4°C or less at all times.
    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • Pest control records were not up to date and adequately maintained. AHS pest control checklist was provided to the operator.Pest control record must be maintained on a monthly basis.

      • Sanitizing bucket was measured at 10ppm. The sanitizing solution was discarded.New sanitizing bucket was prepared at 200pm.
    • 06. Are appropriate food handling practices and plans in place to ensure that food is handled in a manner that makes it safe to eat?
      • Business has not been granted approval to store perishable food (tapioca pearls and sago) at alternative temperatures.Submit an application to do this if wanting to pursue.

      • Tapioca pearls and coconut held on the hot holding were measured at 33°C and 56°C respectively.The hot holding unit was promptly adjusted and measured above 60°C.Foods held on the hot holding must be maintained at above 60°C at all times.

      • "Tapioca pearl" and "Sago" kept in stainless containers were sitting on the shelve at 35°C and 26°C respectively.Tapioca pearl was held on the hot holding unit and the sago was kept in the cooler.Perishable foods must be kept cold (4°C or less) or hot (60°C or greater) at all times to prevent the growth of harmful microorganisms.

      • The prep cooler was measured at 11°C.Perishable foods under refrigeration must be maintained at or below 4°C at all times.
