- Observation: (CORRECTED DURING INSPECTION) Samsung steel cooler temperature was slightly elevated 7.6°C (greater than 4°C) (Public Health Significance) Refrigeration temperatures for perishable foods must be less than 4°C to prevent the growth of disease causing bacteria and toxin production. The cooler was constantly left opened during the peak of operation
- Corrective Action: Instructed the cooler be closed immediately, operator adjusted the temperature control. The unit temperature was rechecked after 10 mins and temperature continued to drop (5.2°C with infrared thermometer). Monitor and log temperatures regularly, adjust and have repaired as necessary to provide a temperature of 4° at all times.
