- 205 - Critical Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
- Observation: (CORRECTED DURING INSPECTION) The internal temperature of the cold holding unit for storing cheese and pickles was above 4ºC. The cheese has been stored fore more than 2 hours. (Public Health significance) - potentially hazardous foods, such as cheese, are required to store below 4ºC to prevent significant bacterial growth.
- Corrective Action: The operator immediately discarded the cheese. Operator to properly cover the containers and make sure the internal temperature of all cold holding units can hold food below 4ºC.
- 305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
- Observation: The concrete floor of the back door is damaged, allowing a large gap to be present even when the back door is closed. The backdoor was not weather stripped. (Public Health significance) - the presence of gap may allow the entry of pest, which can contaminate food and cause structural damage.
- Corrective Action: Operator to repair the floor and door. Operator to make sure no gap is present when the backdoor is closed.
- 501 - Operator does not have FOODSAFE Level 1 or Equivalent [s. 10(1)]
- Observation: No staff is trained with FOODSAFE level 1 is present during the time of inspection. (Public Health significance) - staffs with a proper and up-to-date food safety training ensures safe food storage and preparation.
- Corrective Action: Ensure staffing schedules provide for FoodSafe trained personnel to be present at all times.
