Chocolate fudges were stored on the floor in the Cake freezer-Store all foods at least 6 inches off the floor.

- 1. Holes were observed at the dump station in the back of the facility. - Have the holes repaired and refinished.2. Cardboard box was observed as being used as liners on shelves in the Kitchen area and in the walk-in fridge and freezer.- Liner must be easy to clean, non-absorbent and durable.

- The cleaning cloth was lying on the food counter.The operator removed the cloth.-Ensure that the clean cloths are placed in the sanitizer solution.

- In the hot holding unit, 1)The plant -based gravy was at 52 C 2)Mushrooms were at 50 C.3) Beef patties were at 56 C.Both the plant-based gravy and mushrooms were reheated above 74 C by the operator.The beef patties were discarded by the operator and new beef patties were placed in the hot holding and temperature was 84 C.-Please ensure that the high-risk food in the hot holding should be placed at 60 C or higher.

- 1)Frosting was observed on the ceiling of the walk-in freezer where the frozen cakes were being stored.2) Hole in the wall under the food preparation sink was observed.- Fix the frosting in the walk-in freezer, and the hole under the food preparation sink as it could be good hiding spot for the pests.
