      • 1. The back door had visible gaps. 2. No pest control was available during inspection. Corrective action. 1. Install a weatherstrip to eliminate the gaps.2. Have a record of pest control.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • 1. The flooring at the 3-compartment sink was missing tiles. 2. The wall by the walk-in freezer had a hole.1. Have the floor repair so it is easy to clean, durable and non-absorbent.2. Have the hole in the wall repaired and refinished.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • In the walk-in freezer. Raw wood was being used as shelves. - Staff removed the wood from the walk-in freezer. - All shelves must be easy to clean, non- abosrbent and durable.

    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • Paper towel rolls are being stored outside of the paper towel dispenser. - Paper towel dispenser must be stored in the dispenser to prevent contamination. - Install new paper towel dispensers if they are in disrepair or if incompatible with the paper towels that are available.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • The walk-in cooler had an ambient temperature of 9C.Ensure that the cooler is able to maintain a temperature of 4C and below at all times. Monitor the temperature and have the cooler serviced if the temperatures do not correct.Staff placed the milk and cheese in the prep coolers.

      • No surface sanitizer prepared at the time of inspection. - Please ensure a sanitizer solution such as Quats is available at all times. Store cleaning cloths in the sanitizer solution in between use.
