- Both hand sinks were dry.Ensure hand washing is performed at the hand sinks prior to starting any food prep and when you first enter the kitchen. The hand sinks are stocked with soap and paper towel and are dedicated for handwashing so this is the best place for handwashing.
- 10. Are food temperatures during storage and processing being controlled to maximize food safety?
- The cooler holding cut up/ prepped fruit (ie. cut bananas, blueberries, cut avocados, etc.) measured about 15-16C ambient. The foods items had just been put out for 1 hour. During the inspection, the supervisor placed ice in this cooler and said someone was supposed to be arriving that day to fix it.Ensure coolers are operating at 4C or less. Do not store food in it if it cannot be properly temperature controlled (ice can be used as an interim measure).
