- Observation(s): Quat test strips are not available to monitor the concentration of sanitizers in use on the premises. Notify the area EHO once available.
- F2.1A Sanitizer test strips must be available for each chemical sanitizer used at the premises.
- F2.3 Are food contact surfaces, utensils and equipment washed and sanitized in a manner that removes/prevents contamination?
- Observation(s): Operator has a clean in place procedure for the meat slicer after each use. Slicer appears clean. Ensure that the meat slicer is completely disassembled, washed and sanitized at least every four hours once it has been used. Ensure that knife block/holder can be properly washed and sanitized to remove food residue from crevices. You may need a small flexible brush to properly scrub the inside. If this cannot be done install a magnetic rack/strip to store knives or find another alternative. Quat sanitizer concentration in spray bottle was higher than needed for food contact surfaces (e.g. >400 ppm). Manufacturer label notes to use a concentration of 195 ppm on food contact surfaces without requiring a potable water rinse. Diluted solution was made in spray bottle during inspection.
