What these findings mean

Health authorities word their violations differently, so we group them by what they mean for food safety. Higher-risk findings are the ones inspectors treat as critical, because they can directly make someone sick.

  • Protecting food from contaminationHigher risk

This covers how food is stored, prepared and displayed: raw meat kept away from ready-to-eat food, food covered and stored off the floor, and nothing dripping or splashing into it. Cross-contamination from raw to cooked food is a direct route for salmonella and E. coli.

Recorded once on October 24, 2024. For example: 5 Are the premises and equipment properly maintained and operated in a sanitary manner (i.e. ongoing maintenance)?

  • Handwashing and staff hygieneHigher risk

Hands are the main way germs like norovirus move from people to food. Inspectors look for stocked, accessible handwashing sinks, staff washing hands when required, hair restraints, and sick employees being kept away from food. Gaps here can spread illness quickly.

Recorded once on October 24, 2024. For example: 7 Are there handwashing stations available and properly supplied?

    • F2.5 Are the premises and equipment properly maintained and operated in a sanitary manner (i.e. ongoing maintenance)?
      • Observation(s): Observation: Backsplashes for sinks are not available. Corrective Action: Ensure back splashes are available for sinks so that water only comes in contact with smooth, durable, easily cleanable materials. Observation: One bathroom door opens directly into the production area. Original floor plan suggested some sort of sliding door would be available here. Corrective Action: Install a barrier (that is made from an easily cleanable material) between the production area and the washroom entrance. A solid door would be ideal however a tall curtain can also work. Signage must clearly indicate the production area and storage areas are for employees only, the entrances to these areas should only be open when employees are present. Observation: One concrete counter appears rough to the touch and does not appear to be easily cleanable. Corrective Action: Ensure this surface is smooth, durable, and easily cleanable (e.g. apply some sort of sealant). Note: Counters in other service areas have not been installed yet, ensure these surfaces are also smooth, durable and easily cleanable.
      • F2.5B The premises must be properly constructed and maintained in good, clean and sanitary condition.
    • F2.7 Are there handwashing stations available and properly supplied?
      • Observation(s): Observation: Soap and paper towel are not available at all handwashing stations yet. Corrective Action: Ensure that soap and paper towel are available at all handwashing stations.
