- Observation(s): no chlorine test strips onsite
- F2.1A Sanitizer test strips must be available for each chemical sanitizer used at the premises.
- F2.5 Are the premises and equipment properly maintained and operated in a sanitary manner (i.e. ongoing maintenance)?
- Observation(s): The interior of the trailer ( ceiling and walls) is constructed of S/S metal but Operator has lined the ceiling and walls with raw wood. Exposed wood surfaces must be sealed to make the surfaces smooth and impervious to moisture Spray bottle for ready-to use Chorine sanitizer must be labelled "sanitizer"
- F2.5B The premises must be properly constructed and maintained in good, clean and sanitary condition.
- F2.5D Chemicals, cleaners and other agents must be properly labelled and stored separately from food to prevent contamination.
- F2.7 Are there handwashing stations available and properly supplied?
- Observation(s): Temporary (portable) hand wash sink set up for the operation ( Aquatainer jug with spigot at the bottom, pump dispenser for soap, roll of paper towels in a dispenser, and a collection bucket for the wastewater) Aquatainer jug has a capacity of 26 L, so Operator will carry an extra bottle of potable water ( 18 L or more) to meet the 36 L minimum required for mobiles.
