    • 07. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Critical)?
      • The starch and slurry area, where raw chicken is prepared, was located adjacent to the external outdoor door, a large waste bin, and the clean equipment/utensils area. The operator indicated that raw chicken used to be prepared in another area and was recently moved. Ensure adequate separation between raw chicken and surrounding areas to prevent cross-contamination.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • The chicken cooler near the frying area, used for coating chicken with flour, was not equipped with a thermometer. Please obtain a thermometer to verify and monitor temperatures.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • One hand sink near the area where spices are obtained, next to the storage area, was obstructed. Please ensure all hand sinks are easily accessible at all times. The operator removed the items from the area.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • The dishwasher was not operational. Please repair the dishwasher.
