      • 1) Paint was chipping off the wall above the 3 comp sink. Please repair.2) Wall was damaged next to the stove. Please repair and finish so area is smooth, non-absorbent, and easily cleanable.November 21/25: The wall damage by stove is outstanding., other area has been corrected

    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • 1) Perishable foods stored in the display cooler measured between 8C and 10C. PHI returned to measure temp after staff adjusted temp and 6-7C air temp was measured. Please ensure all perishable foods are maintained at or below 4C at all times.2) Unable to locate probe thermometer. Please obtain.
    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • Reusable public dishware, cups, and cutlery were washed in the domestic dishwasher in the kitchen for cooking classes. Unable to determine if temperature reaches sanitizing requirements from this dishwasher. Please provide dishwasher manufacturer specifications for AHS review. All reusable customer must otherwise be manually washed, rinsed, and sanitized in the 3 compartment sink in the concession.

      • Unable to locate sanitizer test strips for chlorine. Please obtain.

      • Unable to determine if person in care and control of concession was certified in a recognized food safety course. Please provide copy of food safety certificate.
