      • The internal surfaces of the ice maker were observed to be dirty. Conduct thorough cleaning of the ice maker.

      • Grease buildup and food debris were observed on the kitchen floor in hard-to-reach areas, such as behind and under the stove. Conduct thorough cleaning of all affected areas.

      • The cold faucet of the designated hand sink was not functional. Ensure running cold water is available at the hand sink.Chef indicated handwashing was being completed at the 2-compartment dishwashing sink by the dishwasher which had paper towels and soap in their respective dispensers.

      • Particle board shelves in the basement storage area do not appear to be cleanable or impervious to moisture.Ensure the shelves are smooth, washable and impervious to moisture (ie. seal with a sealant or paint).

      • A part of the wall of the basement prep area is damaged and has holes. Ensure wall is repaired and maintained in a smooth, easy to clean and non-absorbent condition.

      • Particle board shelves in the basement storage area do not appear to be cleanable or impervious to moisture.Ensure the shelves are smooth, washable and impervious to moisture (ie. seal with a sealant or paint).
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • The small freezer in the bar area which mainly holds ice cubs had a thick layer of ice/ frost buildup on the shelves and some spills at the bottom.Clean this freezer and remove the frost/ ice buildup.
