- F2.3 Are food contact surfaces, utensils and equipment washed and sanitized in a manner that removes/prevents contamination?
- Observation(s): Observation: High temperature dishwasher was not able to reach a dish level temperature of 71°C (160°F). Outer temperature gauge/display for final rinse cycle was lower than 82°C (180°F). Dishware was not being properly sanitized. Corrected During Inspection: Operator agreed to sanitize dishes in the three-compartment sink for the time being. Further Corrective Action: Repair/service high temperature dishwasher so that at least 71°C is reached at the dish level. Note: Operator noted that an iodine sanitizer could be connected to the dishwasher to provide a 12.5 ppm iodine solution to the dishware during the final rinse cycle. Please notify the area EHO if this option is used and ensure the product label is followed appropriately.
