      • The staff stated that the food wrap on the sushi roller after use is changed after 4 hours.Ensure the food wrap on the sushi roller is changed at least every 2 hours after use.

    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • There was no Quat sanitizer in any of the red buckets and in the main Quat dispenser.The operator mentioned that they had called the company to come and fix it and in meantime were mixing the Quat sanitizer solution manually. When the Quat sanitizer was tested by the inspector at the main dispenser it was measured at 0 ppm. They had bleach in the facility, so the operator was asked to make bleach solution and use it for cleaning and sanitizing until the Quat sanitizer gets fixed. The operator was even asked to get chlorine test strips for testing and measuring the solution.-Ensure that the bleach solution is at 100 ppm.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • 1) The combined total of FOG layer + solids layer was observed at 30% on the records on site.-Ensure that the combined total of FOG layer + solids layer must be 25% in between the cleanings.2) The exhaust hood above the stove was greasy.-Please clean the exhaust hood.
