   • 29(2)(a) A maintenance, cleaning and sanitation program must include procedures to ensure that all of the following are done: (a) the food establishment and equipment are maintained, cleaned and sanitized;
     • The mechanical dishwasher currently in use does not meet the NSF 184 requirement and therefore is unsuitable for use in a childcare setting. If the facility would like to continue to use a mechanical dishwasher, it must either provide commercial sanitizing during the rinse step, or meet the NSF 184 standard. In the meantime, manually wash and sanitize dishware with a method that satisfies the requirements set out in 4.2.8 of the Nova Scotia Food Retail and Food Services Code.
