   • 29(2)(a) A maintenance, cleaning and sanitation program must include procedures to ensure that all of the following are done: (a) the food establishment and equipment are maintained, cleaned and sanitized;
     • Food contact surfaces must be sanitized with an approved food contact surface sanitizer including Quatto 44 when mixed to a sanitizing concentration or unscented household chlorine bleach mixed to a concentration of 100ppm by adding 1/2 tsp (2.5ml) bleach to 1 litre of water.
