      • Observation (CORRECTED DURING INSPECTION): Upright sandwich display cooler not properly cold holding. Internal temperature taken from 2 liquid items. Top side of cooler tested at 8c and bottom tested at 10c. Sandwiches which were made today relocated to adjacent pop cooler which is properly cold holding at <4c
      • Corrective Action(s): Do not use cooler for storing perishables until it has been serviced to ensure perishables can be cold held at <4c

      • Observation: Upright sandwich cooler observed to be fluctuating in temperature. Unit not on defrost cyle. When compressor kicks in temperature drops to 3.5c. However when the compressor kicks out temperaure rises to 8c. Sandwiches (Perishables) relocated to pop cooler which is consistently cold holding at 2c.
      • Sandwich prep cooler observed to be going in and out of defrost at time of inspection with temperatures cycling above and below 4c. As a precaution, all perishiables were relocated to the white storage cooler which is cold holding at <4c
      • Corrective Action(s): Do not store perishable inside upright sandwich display cooler until it has been verified it is capable of consistently cold holding at <4c.
      • Do not use sandwich cooler to store perishables until it has been serviced to verify it is capable of cold holding at <4c

      • Observation (CORRECTED DURING INSPECTION): Bleach sanitizer spray bottle was too strong (solution was yellow; bleached the test strip). Explained the correct concentration to the operator: 100 ppm = 1/2 teaspoon bleach in 1 L of water. Diluted solution during inspection. Ensure that the solution is changed once a week to maintain the correct concentration
