- 10. Are food temperatures during storage and processing being controlled to maximize food safety?
- 1. The temperature measured in the prep line 2 fridge was between 10-12 degrees Celsius. Food in the refrigerator was discarded at the time of inspection.-Do not store any food in the refrigerator until the refrigerator is repaired or replaced and maintaining 4 degrees Celsius or less. Post signage on the refrigerator indicating that it is out of order.2. Thermometers were not provided in the family dining room refrigerator and the bistro refrigerator for monitoring temperature.-Please ensure that all refrigerators are equipped with thermometers to monitor temperature.
- 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
- A min/max dishwasher safe digital thermometer was not onsite for testing the maximum dish temperature of the dishwasher.-Please obtain a thermometer and use to test the dishwasher temperature on a daily basis.
- 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
- 1. The tap was leaking in the family dining room.-Please repair the leak.2. There was a hole in the wall in the dry storage room.-Please repair the hole and ensure the surface is smooth, durable, impervious to moisture and easy to clean.
