   • 205 - Critical Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
     • Observation: Internal temperature of smoked processed meat in the deli meat cooler was measured at 6.8°C. (Public Health Significance) - Storing potentially hazardous food items in the temperature danger zone (4°C - 60°C) for more than 2 hours can cause growth of illness causing pathogens and toxin formation, such food items if consumed can cause foodborne illness.
     • Corrective Action: All potentially hazardous food items such as smoked processed meat to be stored at a temperature of 4°C or colder.
   • 401 - Critical Adequate handwashing stations not available for employees [s. 21(4)]
     • Observation: Handwashing station in the deli section is not equipped with hot water. (Public Health Significance) Hand washing stations should be adequately equipped with both HOT and cold running water at all times to facilitate proper handwashing and minimize the risk of foodborne illness by contamination.
     • Corrective Action: Ensure that the handwashing station in the deli section is equipped with bot HOT and cold running water at all times.
