      • Kitchen sanitizer solution was strong enough to bleach out test strips.-Ensure staff are making kitchen chlorine solution at 100-200 ppm-Operator diluted during inspection
    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • Chlorine test strips expired.-Obtain new test strips for sanitizer

      • Records were not kept for the kitchen fridge temperature or the dishwasher rinse temperature. The records were found and this will be corrected today.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • The probe thermometer was out of battery. This was corrected during inspection.
