- - A dishwasher with an approximately one‑hour sanitizing cycle was installed; therefore, it was not tested during the inspection. The operator will be replacing the current unit within the next two weeks with a two‑minute high‑temperature commercial dishwasher. In the meantime, a three‑compartment dishwashing area is available.*Please ensure the district inspector is notified once the dishwasher has been replaced and continue following the wash‑rinse‑sanitize‑air‑dry method as discussed until the new unit is installed.
