      • Observation: Cleaning is required in the following areas:
      • > Cook line: grease accumulation on vent hood filters and the floor underneath cooking equipment
      • > Dishpit: food debris accumulated on the floor near the floor-wall junctions.
      • Corrective Action(s): Clean and sanitize the premises as per your sanitation plan. Vent hood filters can be removed and should be cleaned on a regular basis in addition to professional vent hood cleaning.
      • Date to be corrected by: 1 week.

      • Observation: Prep cooler is not maintaining 4C. Facility is using only the insert level by placing ice in inserts. Bottom storage level is empty.
      • Corrective Action(s): Service the cooler as soon as possible. Using ice in inserts if a TEMPORARY solution only.
      • Add more ice to the inserts as soon as they start to melt. Do not fill inserts all the way - fill only what can be used within 1-2 hours. Inserts must be IN ice, not just sitting on top.

      • Corrective Action(s): This small hole can be an access point for mice. Repair or replace this door sweep. Continue to monitor facility with traps. Correct within one week.

      • Observation: Deep cleaning required under shelving, where floors meet walls, behind and beside freezers.
      • Corrective Action(s): Keep up with daily, weekly, and monthly cleaning and conduct a really good deep clean within the next month.

      • Observation: Raw piece of wood behind two compartment sink in front serving area.
      • Corrective Action(s): Seal or paint this piece of wood or cover with a hard piece of material such as stainless steel or hard plastic. Continued water splashing from this sink could result in mold growth. By sealing or covering this piece of wood it will be easier to clean and not allow water to be absorbed. Correct within one month.

      • Observation: Old stand up cooler in kitchen is not in use as a cooler and is being used for minimal storage of take out containters. This cooler is taking up a lot of room in the kitchen and as a result the new stand up cooler is partially in the way of the handwashing sink.
      • Corrective Action(s): If you wish to use this old cooler for storage, relocate it to a back area of the facility. The handsink must always be easily accessible. Correct within one week.

      • Corrective Action(s): Clean above mentioned areas. Also, as upper oven is not in use, remove the frying pans stored in there. Correct within one week.

      • Corrective Action(s): Staff put in cooler at time of inspection. Only keep an amount of eggs out at room temperature that can be used within 2 hours during your breakfast rush and keep the rest in the cooler.

      • Observation (CORRECTED DURING INSPECTION): Roast beef out on tray at room temperature thawing. Roast at 4C.
      • Corrective Action(s): Staff placed into cooler as roast was not going to be immediately cooked. Ensure to thaw frozen food in the cooler or cold water, not at room temperature.

      • 4. White plastic cover on top of ice maching is ripped and dirty.
      • Corrective Action(s): 1. Clean around friers. Correct within one week.
      • 2. Soak, wash, rinse, and sanitize scoop. Correct before next use.
      • 3. Thouroughly clean floor of dishwashing area, including edges where wall meets floor. Correct within one week.

      • Observation: Cleaning has not been maintained in some areas.
      • Corrective Action(s): The following requires cleaning:
      • 1. food spill on bottom of front prep cooler - today
      • 2. water pool on bottom of small front beer cooler - today
      • 3. floors underneath of dishwashing sinks (front and back) and tables - one month
      • 4. dust build up on fan cover in walk in cooler - one month
      • 5. dirt build up on mat that fan is sitting on - today
      • 6. vent hood has not been professionally cleaned since Dec 2017 and it appears to have not been cleaned at all for some time - clean vent hood this week in house and contact service company for appointment

If unit cannot maintain 4C or less discontinue use until it is fixed. Have unit serviced again - operator contacted service company at time of inspection. Contact EHO once unit is in good working order.

      • Observation (CORRECTED DURING INSPECTION): Ice scoop stored in container of water at 10C in insert above ice cream freezer.
      • Corrective Action(s): Ice scoops can be stored in in cold water (4C or less), in the freezer, or washed and sanitized in between use and stored at room temperature. If you wish to store the scoops in cold water, place ice underneath/around container and change throughout the day as needed. Staff poured out water and brought container and scoops to dishwashing area for cleaning.

      • Observation (CORRECTED DURING INSPECTION): Kitchen sink had chemical spray bottle and other things in it. Kitchen and front handsink did not have paper towel in dispensers but paper towel roll was placed on counter.
      • Corrective Action(s): Operator removed items from kitchen sink at time of inspection and placed paper towel into dispensers. Ensure that handsinks are always accessible and fully stocked for convenient and appropriate handwashing by staff.

      • Corrective Action(s): Obtain thicker door seal or wider bottom door sweeper or plug hole with something that rodents cannot chew threw. Also reset traps in back storage room to monitor for rodents. Correct within one week.
