      • Observation (CORRECTED DURING INSPECTION): Condiments and cut veggies were observed without temperature controal and no time as a public health controal was being implemented. Food was outside of temperature control for more than 2 hours.
      • Corrective Action(s): Corrected During Inspection: the food items were immediately and verified as discarded. Operator to use and place the condiments and items inside small dandy cooler. Operator instructed to add in a prep cooler for these operations.

      • Observation (CORRECTED DURING INSPECTION): No sanitizer solution for food contact surfaces was prepared at time of inspection, CDI, the.
      • Corrective Action(s): Corrected During Inspection (CDI): the operator & staff were instrucdted to immediately prepare solution. Solution was prepared and measured at 200ppm Chlorine. All surfaces (Food Contact) were cleaned and then sanitized during inspection.

      • Observation: Flies were observed in the dry storage area. Food items were sealed.
      • Corrective Action(s): Staff stated new sticky traps with catch bsins will be installed today. UV zapper light onsite. Ensure measures in place to prevent and control issue. To be corrected within 3 weeks.

      • Observation (CORRECTED DURING INSPECTION): Observed chemicals stored above equipment and empty containers/pots by the dishwashing area.
      • Corrective Action(s): CDI: The operator/staff hand immediately removed and stored the chemicals under the sink, away from possible contamination area.

      • Observation (CORRECTED DURING INSPECTION): Surface sanitizer solution not prepared at time of inspection.
      • Corrective Action(s): Staff prepared 100-200ppm bleach solution in a bucket. Surface sanitizer must be available at all times.

      • Observation (CORRECTED DURING INSPECTION): Handwash basin was obstructed at time of inspection - empty bucket stored inside basin.
      • Corrective Action(s): Handwash station must be fully accessible at all times. Do not store items inside the basin.

      • Observation (CORRECTED DURING INSPECTION): Rodent droppings noted in the corner next to chest freezer by the back door.
      • Corrective Action(s): Staff removed droppings at time of inspection. Continue to monitor for rodent activity and looking for any entry points.

      • Observation: Counter cooler had air temperature of 7.4C.
      • Corrective Action(s): Service this cooler - adjust the temperature or replace with a stronger power cooler that can combat heat from surrounding cooking elements. All coolers must have an air temperature of 4C.
      • Relocate all food items in this cooler to any other working cooler on site.
