    • F1.7 Are foods protected from contamination?
      • Observation(s): Large cuts of wrapped/packaged beef was observed stored against packages of ready to eat (RTE) food (cheese, bread, etc) inside the one freezer. Although this beef was in a frozen state, beef arrives unfrozen and packages can leak. Please store raw animal proteins below and adequately separated from RTE food inside refrigerators and freezers. Please discontinue use of single use pop/water bottles as cooling wands and ensure that cooling wands are stored protected from possible contamination inside freezers. Please also ensure that bread is stored protected (ie. wrapped or within a container) within freezers and not stored directly on top of other packaged food and/or against the inside of the freezer itself (these surfaces may not be sanitary).

    • F2.3 Are food contact surfaces, utensils and equipment washed and sanitized in a manner that removes/prevents contamination?
      • Observation(s): An unlabelled sanitizer bottle was measured with <100ppm chlorine. Also observed a cleaning cloth in continuous use left on a counter top and not stored within a sanitizer solution. Please ensure that sanitizer solutions are properly label, tested routinely to confirm adequate sanitizer concentrations and that cleaning cloths in continuous use are stored within sanitizer buckets located safely within the kitchen.
    • F2.4 Are proper freezing and thawing procedures followed?
      • Observation(s): Observed pre-cooked brisket thawing in running water at the back sink measured at a temperature of 17deg.C. This brisket was to be cut/portioned, re-frozen and then subsequently thawed again for use at a later date. Please ensure that pre-cooked brisket (and other ready to eat (RTE) potentially hazardous food (PHF) &/or food that will not receive a cook step following thawing), are preferentially thawed under refrigeration at 4deg.C or less. Please also ensure that thawing of food under cool running water where necessary does not exceed 10deg.C per the Canadian Retail and Food Services Code and that thawing of food using this method is cooked immediately following the thawing step.
    • F2.7 Are there handwashing stations available and properly supplied?
      • Observation(s): All sinks within the Flip Flops & Hops Eatery function as mulit-use sinks and there is currently no dedicated hand washing sink available exclusively for handwashing as a minimum requirement. Please provide a dedicated hand washing sink within the main kitchen area that is supplied with its own faucet and liquid soap/paper towel dispensers. Please confirm a location by June 12, 2023 and complete the installation by June 30, 2023.
    • F3.3 Are written food handling procedures (Food Safety Plan) current and available on site?
      • Observation(s): Food Safety Plan could not be located while onsite. Please provide a food safety plan update that identifies food safe practices, critical control points and critical limits used for thawing, cooking/reheating, cooling & other food handling steps.
