- F2.3 Are food contact surfaces, utensils and equipment washed and sanitized in a manner that removes/prevents contamination?
- Observation(s): Please resurface or replace worn cutting boards in the meat department that are showing ware and staining/no longer easily cleanable. Please ensure that labelled sanitizer buckets are located at each work station (vegetable and meat department) for storage of cleaning cloths in continuous use and for ease of access in routine sanitizing of food contact surfaces.

- Observation(s): Please clean the meat department floor, shelving and some common touch surfaces where an organic build-up was observed. Please replace worn/rusted shelving units in the meat department walk-in refrigerator. Please complete additional cleaning in the back of store storage area (including the walk-in refrigerators/freezer floors and some shelving). Please repair the stuck valve on the vegetable department spray arm that is impacting use of the sink faucet and wall mounted sanitizer dispenser.

- F1.2 Are proper temperature controls maintained to ensure safe storage and display of foods?
- Observation(s): Some temperatures of meat/cheese within the one open display refrigerator in front of the deli were measured as high as 10deg.C; this was noticeably different from the same style open display refrigerator located in front of the bakery where temperatures were all measured at ≤4deg.C. Temperatures of some meat/pork products in the open style meat display refrigerator adjacent to the meat department (left side of the unit) were measured as high as 14 deg.C (surface temperature). It was noted that this refrigerator was on a defrost cycle at the time of temperature measurements, however, there is a concern that the timing of this defrost cycle is too long to prevent unacceptable deviation of PHF temperatures above 4deg.C. Please service both of these refrigeration units to ensure maintenance of PHF at temperatures of ≤4deg.C. Also as discussed, please revise stocking of practices with the "Grimms meat" open display refrigerator to support better temperature control of ready to eat meat within this refrigerator. Surface temperatures of some double or high stacked meat items were measured as high as 10deg.C within this unit.

- Observation(s): Please ensure better cleaning of cutting boards within the meat & produce departments at the "end of shift" as discussed, as well as, better cleaning of the band saw and meat grinder (as outlined in sanitation procedures mounted on the wall in behind the meat grinder). Some cutting bards (ie. produce department) may also require re-surfacing. Please confirm repair to the floor/grease interceptor located in the meat department that is currently covered in plywood and under repair - please confirm by March 13, 2023.

- Observation(s): Temperatures of pre-packaged ready to eat meat within the "Grims Meat" open display refrigerator were measured as high as 12 deg.C and both thermometers within this unit were not working at the time of inspection. Some product discarded by operator at the time of inspection. Some store refrigerators (ie. open dairy refrigerator, tofu/drink cooler) were overstocked or requiring adjustment and some PHF temperatures were measured as high as 9deg.C.
