- Corrective Action: Store wiping cloths in a sanitizing solution of 200 ppm chlorine or 200 ppm QUATs. Mix according to the manufacturer's specifications. Have a dedicated sanitation bucket to completely immerse the wiping cloths

- Observation: Inadequate sanitizing rinse solution. No sanitizer detected. (Public Health significance) - Automatic glass washers must provide a minimum concentration of 12.5 ppm (iodine) as required to effectively sanitize dishware,
- Corrective Action: Have the glass washer repaired by a qualified technician and monitor and log sanitizer concentration regularly so you know when the unit needs adjustment or repair. Disposable cups to be used until repairs have been made.
