- F2.1 Does the facility have proper monitoring supplies?
- Observation(s): No chlorine test strips were observed for measuring the sanitizer concentration of low temperature dishwasher and food contact surface sanitizer. This is required to ensure appropriate sanitizing concentrations. Ensure chlorine test strips are available onsite.
- F2.1A Sanitizer test strips must be available for each chemical sanitizer used at the premises.
- F2.3 Are food contact surfaces, utensils and equipment washed and sanitized in a manner that removes/prevents contamination?
- Observation(s): Chlorine sanitizer was measured at 0 ppm in the final rinse cycle of low temperature dishwasher. Ensure to maintain a minimum of 50 ppm chlorine in the final rinse cycle of the dishwasher for adequate sanitizing of utensils, and test the sanitizer concentration daily with chlorine test strips. No sanitizer solution was observed for sanitizing food contact surfaces. Sanitizing solution with accurate concentration are required for adequate sanitizing of food contact surfaces. CDI- Use chlorine test strips to ensure a 200 ppm chlorine concentration is measured in the sanitizer solution, and replace the sanitizer solution every 2 hours or as needed.
