    • 23(1)(a) All equipment and utensils used to process, prepare, store, serve, sell or display food must be designed, constructed, installed and maintained to (a) protect food from contamination;
      • Ice scoop must be available for ice and be stored in a sanitized container. Scoop and container must be clean and sanitized nightly. The handle on the scoop shall never go into the ice. Scoop for flour must be stored so the handle remains out of the product.

    • 82(1) No person shall operate a food establishment, unless exempted by an administrator, without first having obtained a permit from an administrator.
