- Observation(s): Install a backsplash in the dishwashing area (where dirty utensils are left to soak) and areas where food debris will likely spill onto the wall (e.g. near trashcan). Wiping cloths should be stored fully submerged in sanitizer solution when not in immediate use. Poster will be provided. Reminder to remove equipment not needed for operations from the premises (e.g. pizza peel/unused equipment). Discussion around ventilation in the dish pit area and to monitor for signs of excessive water vapor/humidity.
