- Observation (CORRECTED DURING INSPECTION): 0ppm chlorine residual was detected from the low temperature dishwasher and the glasswasher.
- Corrective Action(s): Both machines were using concentrated chlorine chemicals that were too old. Staff switched to a newer supply of concentrated chlorine at the time of inspection and there is now 50ppm chlorine residual for sanitizing.
- All dishes, utensils, and equipmemt that were run through the dishwasher today have not been properly sanitized and must be put through the dishwasher again.

- Observation (CORRECTED DURING INSPECTION): Rice paddles are stored in room temperature water.
- Corrective Action(s): Previously discussed - rice paddles must be stored on ice or DRY in order to prevent bacterial growth.

- Observation: Rodent droppings observed in the following areas:
- > Hot water tank closet
- > Under the handsink behind the front bar
- > Under the glass/mug storage in front of the kitchen entrance
- > In the dry storage room - on the shelves, under the shelves, on top of bins, inside crates holding packaged products
- > By the back exit - along the edge of the steps leading down from the door, infront and behind the old ice machine
- Corrective Action(s): Remove droppings, clean and sanitize these areas with a bleach solution. Continue to monitor for rodent activity.
- The shelves in the dry storage room must be routinely sanitized by pulling items off the shelf for product rotation and inspection. Any damaged food items (chew marks, spilled product) must be discarded immediately.

- > Where the hot water tank is by the side exit
- Rodent droppings noted under the blue crates stacked in the large storage room (under the canola oil)
- Corrective Action(s): Remove droppings, clean and sanitize with a bleach solution. Continue to monitor for activity.
- Increase overall sanitation to prevent the presence of flies. All drains (floor drains, sink drains) must be flushed at the end of the day. Consult with pest control technician about service for flies. Increase the number of traps, but increasing sanitation here is key.

- Observation (CORRECTED DURING INSPECTION): One insert of raw eggs was stored in ambient temperature.
- Corrective Action(s): Move eggs into the cooler immediately. Raw eggs are potentially hazardous and must be refrigerated at all times.

- Observation (CORRECTED DURING INSPECTION): Cooked pork hocks from 10am were stored on the counter next to the deep fryers until the time of inspection at 2pm.
- Corrective Action(s): Discard hocks or leave for staff meal only - do NOT cool down to serve to customers.
- Discussed with staff: no ambient temperature storage of food is allowed unless there is clear time tracking in place (using labelling, timers, etc.). Food that will not be immediately handled must be put back into the cooler.

- Observation (CORRECTED DURING INSPECTION): One container of frozen skewers were thawing at room temperature. Surface temperature at time of observance was 3-4C. Staff were in the middle of other tasks and were not ready to cook the skewers.
- Corrective Action(s): Move skewers into the cooler. All frozen foods must REMAIN under refrigeration or under cold running water until they are fully thawed and ready to use.
