      • Observation (CORRECTED DURING INSPECTION): 1) Dishes and equipment have NOT been adequately sanitized through manual warewashing.
      • 2) Food contact surface sanitizer measured >200ppm chlorine.
      • Corrective Action(s): 1) All dishes MUST be properly sanitized after washing and rinsing. Staff are directed to switch to single use dishes to minimize the amount of warewashing.
      • Reviewed manual warewashing procedure: Wash, Rinse, SANITIZE in 50-100ppm bleach solution, then air dry
      • 2) Diluted sanitizer to 200ppm chlorine. Use the chlorine test strips that are on site to check the concentration each day.

      • Observation: Rodent droppings observed in the following areas:
      • 1) Storage room by the back door - under the shelving rack and in front of the ducting system
      • 2) Under the dishwashing line
      • 3) Under the prep table on the dry storage shelf (blue bins)
      • Corrective Action(s): Remove droppings, clean and sanitize these areas. Continue to monitor for activity

      • Observation: Gaps observed around the wires and piping coming down from the ceiling above the dishwashing line.

      • Observation: Operator informed at the start of inspection that the high temperature dishwasher is not working. A replacement has already been ordered and is expected to arrive on Monday Feb 23.
      • Corrective Action(s): CORRECTION ORDER ISSUED.
      • Dishwasher MUST be fully replaced and operational before opening time on Monday. A Closure Order will be issued if the new dishwasher is not installed and able to reach a minimum final rinse temperature of 71C by 11:30AM.

      • Observation (CORRECTED DURING INSPECTION): Surface sanitizer for the back of the house measured >200ppm chlorine. This is a REPEAT VIOLATION from the previous inspection.
      • Corrective Action(s): Staff diluted the solution to 200ppm. Use test strips to verify the solution at the start of each day.

      • Observation: Cleaning is required for the vent hood filters. Staff are currently cleaning and sanitizing once a month.
      • Minor amount of black mildew noted in the crevices of the ice machine interior.
      • Corrective Action(s): The cook line is heavily used at this facility. Vent hood filters must be removed for cleaning at least once every 2 weeks.
      • Empty the ice machine for cleaning and remove black mildew.

      • Observation (CORRECTED DURING INSPECTION): Towels used for cleaning food contact surfaces were not dispensed inside bleach sanitizing containers.
      • Corrective Action(s): This may cross contaminate food contact surfaces because bacteria may grow on dirty used towels. Dispense all towels used for cleaning food contact surfaces into 100-200 ppm bleach sanitizer solution so that any food borne bacteria can be destroyed and does not cause cross contamination.

      • 303 - Equipment/facilities/hot & cold water for sanitary maintenance not adequate [s. 17(3); s. 4(1)(f)]
      • Observation (CORRECTED DURING INSPECTION): There is no running hot water at the hand washing station across from the 2 compartment sink.
      • Corrective Action(s): Do not use this sink for hand washing, instead use the 2 compartment sink for handwashing since there is a paper towel dispenser and soap already available at the 2 compartment sink. Fix the hot water for the mentioned hand washing station.

      • Observation (CORRECTED DURING INSPECTION): The back door was left open at time of inspection and mesh screen door is broken with easy access points for pests.
      • Corrective Action(s): This is an easy access point for pests to get inside and may lead to food contamination and/or an infestation. Keep the back door closed, or install a new mesh screen door if you will continue to keep the back door open.

      • Observation: 1) There is a build up of grease on the vent hood and under the deep frier.
      • 2) Cooler and freezer handles were greasy.
      • Corrective Action(s): This is unsanitary and should be cleaned regularly as part of your approved sanitation plan. Clean the mentioned areas, and ensure to clean them frequently to avoid build up.
      • 2) Clean the handles of all coolers and freezer and ensure that staff are washing hands between tasks so that the mentioned equipment stays in a sanitary condition, and also to prevent cross contamination when handling food.
      • Correction Date: 1 week.
