    • 307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
      • Observation: Shelves in the walk-in freezer are unfinished bare wood which does not provide a surface that's smooth, impervious to moisture and easy to clean.
      • Corrective Action: All bare wood surfaces in the walk-in freezer must be properly finished (e.g., painted) the next time the walk-in freezer is turned off and the shelves are allowed to warm up to room temperature. All food contact surfaces must be smooth, impervious to moisture, easy to clean and non-toxic.
