- 209 - Food not protected from contamination [s. 12(a)]
- Observation: (CORRECTED DURING INSPECTION) Various implements used as scoops were left in products for ongoing use including ingredient bins, ice machines, ready to eat product. Public Health Significance - Improper scoops and scoop storage exposes foods to bare hand contact and potential contamination.
- Corrective Action: Store scoops outside of food bins in clean containers. Also, scoops must be cleaned and sanitized regularly.
- 311 - Premises not maintained as per approved plans [s. 6(1)(b)]
- Observation: Ice crystal accumulation was observed on the floor of the walk in freezer directly beneath the freezer fan unit responsible for air inflow and outflow. The ice formation appears to be caused by moisture freezing in the airflow path, indicating a potential issue with drainage (e.g., malfunctioning heat trace) or temperature control within the unit and creating a potential slip hazard. Public Health Significance - Foods may become contaminated with water that may not be potable. Also, the ice build up may interfere proper cleaning of the walk-in freezer and may contribute to temperature instability (e.g., ice build up on the fan unit itself).
- Corrective Action: Remove existing ice build-up to eliminate the immediate slip hazard. Inspect and repair the drainage system to ensure proper water drainage during defrost cycles, which may include replacing or installing heat tracing on the drain line. -Monitor the freezer’s temperature stability and drainage function following repairs. Ensure the freezer fan and airflow components are functioning correctly to prevent further moisture accumulation.
