- Observation (CORRECTED DURING INSPECTION): While observing worker cutting up chicken to "clean up" she hosed the table, cutting board/block, & cleaver with a dirty hose which was left lying on the floor. No wash step, no sanitizing step. Order issued to cease activity.

- Observation: Area used for handling chickens is very poorly finished & very dirty. Ceiling is perforated aluminum, dented & rusted. Floor is bare unfinished concrete. floor-wall joint is in very poor shape with large holes in wall. Wall finishes are poor, not sealed, not very durable. Lighting is very poor.

- Observation: Premise is re-packaging and cutting up poultry 1) Birds are received in large box packaged together; Staff re-package 2) individual birds are cut up upon customer request; I observed a customer talking to a staff member who then took a whole chicken to a back room and proceeded to cut up the chicken, re-package, and then sell to the customer. This facility is not properly equipped for this activity. Cease re-packaging and cutting immediately. See rest of report for further details.
