- Observation(s): TempTale 4 (USB) units in deli display coolers but not verified by staff if working/ monitoring temperatures. The location for monitoring is inaccurate next to condenser fins (colder than the product storage space). *Require NSF (National Sanitation Foundation) accurate thermometers in each refrigeration and freezer unit as redundancy to ensure the storage space temperature matches the compressor unit gauge. *Require an NSF (National Sanitation Foundation) accurate instant read digital probe thermometer to verify processing/correct cook-out temperatures for each batch of product in the smoker. *Require test strips (Quat & Chlorine) to check the sanitizer dispenser is dispensing correct sanitizer strengths, pails of sanitizer & spray bottles are correct strengths.
- F2.1A Sanitizer test strips must be available for each chemical sanitizer used at the premises.

- Observation(s): Reviewed the Clean in Place (CIP) Warewashing Procedures. Staff wash and sanitize meat processing equipment after each task (saw, block, mixer, burger patty, etc.). Reminder to CIP (Clean In Place) and ensure all food preparation areas are washed, rinsed, sanitized, and air dried between tasks and at least every 4 hours. Ensure your Food Processor Sanitation Plan is available and up-to-date. IMPORTANT *However, the 3 compartment sink chemical dispenser is not dispensing sanitizer. This requires scheduled maintenance by a qualified professional and staff monitoring each shift with test strips to ensure correct dispensing strengths.

- Observation(s): F2.5G *Open flour bag stored beside the hand sink station is open so potential over-splash from washing hands could cross-contaminate the flour. *Store the flour and other dry food products/ingredients in food grade plastic storage bins with lids. F2.5B *The wall and flooring below the hand sink station & 3 compartment sink has water damage and requires repair so as to be smooth, tight, non-absorbent construction. *Knife rack located at small preparation table area along the short wall (entrance to saw area) should be a typical stainless steel knife rack with guard designed to be easily removed for cleaning & sanitizing. *Ceiling and fans in the walk-in cooler are due for cleaning. F2.5K F2.5A *Shelving above the main processing table is due for cleaning and to be assessed for replacement as it may be rusting. This can allow debris to fall into the products during raw meat production.. Recommend assessing all shelving in the facility for replacement with new stainless steel shelving. F2.5E *Facility due for improved housekeeping and orderliness, to facilitate a good cleaning schedule.

Ensure ducting is clear for exhausting the smoke. *Highly recommend a qualified professional assess the smoker exhaust ducting for cleaning or repair/replacement where required, and ensure proper exhausting. This should be part of your maintenance-sanitation plan.

Game only processed in back area; in-store products processed in front area. Good.
