    • F1.7 Are foods protected from contamination?
      • Observation(s): Three dented cans found on floor display shelves. Corrective Action: Ensure dented or damaged cans are not stocked and are disposed of properly. Dented or damaged could potentially contaminate the product with botulism. Note: Facility handles game during hunting season; game meat completely separated from in-store sold products. Different equipment and areas used specifically for game meat when being processed.
      • F1.7A The operator must ensure that all food on the premises is protected from contamination.
    • F2.3 Are food contact surfaces, utensils and equipment washed and sanitized in a manner that removes/prevents contamination?
      • Observation(s): Dishwashing procedure: Ensure equipment is soaked for at least 2-minutes in sanitizer solution before air dry. (See attached documentation). Ensure front of house meat slicers are washed and sanitized at least every 4 hours during hours of operation, to ensure no contamination.
      • F2.3B Manual dishwashing procedure must provide sufficient washing and sanitizing action to remove contamination.

      • Observation(s): Freezer noted at <-18 degrees C. Walk in cooler at 1 degree C. Packaged beef jerky has been tested for shelf stability. Hanging pepperoni shelf stability to be confirmed.
    • F2.6 Are the premises designed and equipped to ensure safe food handling?
      • Observation(s): Boxes of packaged raw meats stored under hanging carcass. Ensure that animal hanging area is kept clear to prevent potential cross contamination and facilitate cleaning.

      • Observation(s): Food safety plan being updated. Not on site at the time of inspection.
