- F1.2 Are proper temperature controls maintained to ensure safe storage and display of foods?
- Observation(s): All refrigeration units except one measured temperatures at or below 4C. Note: The line fridge located opposite the grill should be monitored for compliance as the ambient temperature was 8C. It was unclear if the fridge was going through a defrost cycle at the time of inspection or not working. Operator was directed to monitor the fridge (use a temperature log) and report to the inspector the outcome of her investigation. If the fridge is not capable of holding temperature below 4C, it must be repaired or replaced. All potentially hazardous food (PHF) items have been moved to another refrigeration unit. The operator was directed to kept potentially hazardous food items in that fridge until the working condition of a line fridge is clarified. Report back by April 5, 2023 via email.
