      • Observation(s): QUATs sanitizer solution was not 200 ppm as required. A new solution was made at the time of inspection and a new ratio was determined for use.

      • Observation(s): QUATs sanitizer solution was not 200 ppm as required. A new solution was made at the time of inspection. Test strips on site are for chlorine. It is strongly recommended test strips for QUATs are purchased and used to monitor sanitizer solution concentration.
      • 8.7 - Equipment, utensils and food contact surfaces must be cleaned and sanitized in a manner that removes contamination.

    • 13.2 - Are dishes, utensils and food contact surfaces properly cleaned and sanitized?
      • Observation(s): Surface sanitizer: Quats in spray bottle was at 100 ppm and was immediately corrected to 200 ppm. Discussed sanitizer strength being tested and prepared. Dishes and utensils were cleaned and sanitized using 3 sink method with 100 ppm chlorine solution as sanitizer. Chlorine based detergent was also used for equipment.
    • 13.4 - Are hand washing stations easily accessible?
      • Observation(s): Ice cream scoops were found in handwashing station and were removed for cleaning at time of inspection. Ensure the handwashing basin is accessible for the purpose of handwashing at all times.
