    • 23(2)(b) Equipment used to cook, heat-treat, cool, store, display or freeze food must be designed to (b) control temperature, humidity, air flow and any other condition that is likely to have a detrimental effect on food safety.
      • Small display fridge used to store small individual yogurt packs was overstocked. It measured 7 degrees Celsius at front and 3 degrees Celsius at back. Do not overstock the fridge to allow adequate air flow to maintain the temperature of entire unit at or below 4 degrees Celsius. Some yogurt packs were moved to a different fridge at the time of inspection.
